Earlier this year, Chuck Zwilling and Becca Zwilling Ruegemer, along with their family hosted the Annual Sunny Zwilling Memorial Ice Carousel Extravaganza- ICE Fest featuring the World’s Largest Ice Carousel and benefiting Flyer Pride Pack- A Weekend Food Backpack program for children at risk of weekend hunger in the Little Falls School District.
Chuck is the founder of and Becca serves as a Director on the Board for the Pay It Forward Foundation- hosts of I.C.E. Fest.
This “ice carousel craze” for the Zwilling’s started with their 1st Ice Carousel back in 2017, cut by Chuck and his siblings as part of a small family gathering... fast forward 2 years (and 2 carousels) later, this has turned into a huge Family Friendly Weekend of Events. Chuck and Becca have always taken pride and enjoyed giving back to the community so this was a natural fit for them when the family decided after the first year, to go for the World Record and tie it to a charity.
We’ll see what I.C.E. Fest has in store for 2020!

White Chicken Chili - Recipe

Every year Coborn's has donated their "White Chicken Chili" to be served in the Walmart warming tent ...

Ingredients

    1 lb (2-1/4 cups) dried large white beans or 3 cans (15 oz each) white beans
    2 large onions, chopped
    2 tsp minced garlic
    2 celery stalks, chopped
    1 tbsp New Mexico chile powder
    1-1/2 tsp ground cumin
    1-1/2 tsp dried oregano
    3 ancho chiles or 1 tsp red pepper flakes 1 can (7 ounces) chopped green chiles, drained
    6 to 8 cups chicken stock or water
    1-1/2 lbs coarsely ground chicken
    1/2 tsp salt
    Black pepper to taste
    Shredded Monterey Jack cheese
    Chopped fresh cilantro
    Chopped green or white onions
    Finely minced jalapeño chiles

Preparation

1 If using dried beans, pick over the beans, then place in a colander and rinse well. Place the beans in a large saucepan, add water to cover by 1 inch, bring to a boil, and boil for 2 minutes. Remove from the heat, cover, and let stand for 1 hour. Drain. If using canned beans, drain, rinse, drain again, place in a large saucepan, and proceed with recipe.

2 Add the onions, garlic, celery, chile powder, cumin, oregano, whole anchos or red pepper flakes, and enough stock or water to cover the beans. Bring to a boil over high heat. Cover, reduce the heat to low, and simmer until the beans begin to soften, about 1 hour.

3 Meanwhile, in a skillet, sauté the chicken over high heat, sprinkling with the salt and pepper, until no longer pink, 5 to 7 minutes.

4 When the beans have cooked about 1 hour (or 30 minutes, if using canned), add the sautéed chicken to the chili pot and simmer until the chicken and beans are done, about 20 minutes longer.

5 Set out the garnishes in separate bowls. Ladle the chili into warm bowls and let the diners add the garnishes to taste.

2019 Activites

Free, family weekend activities include a world record attempt for the largest ice carousel with demo cuts, Striders in the snow, Igloo building, speed Skating, Hockey, mini Snowmobiles, mini 4 Wheelers, Nordic skiing, Santa with sleigh rides, figure skating, curling, fat tire bike ride, open skate, sledding, snowman building and the Footprint Project.

This television station in Knoxville, Tennessee also broadcasted us breaking the world's largest Ice Carousel record .... using "Boyd Huppert's Land of 10,000 Stories" documentary which featured our event in 2019.

Janne Käpylehto – chairman of the World Ice Carousel Association - traveled to Minnesota to measure and certify Chuck’s creation as the new world record holder.

Also making the trip: Roger Morneault of Maine, who broke the record with his own sprawling ice carousel last year.

Propelled by four trolling motors, the Zwilling ice carousel spun in a circle for several hours, until winds picked up and pushed it out of kilter. But not before Chuck had achieved his goal: world’s largest ice carousel.
